I'm usually a super clean eater during the weekdays but my fiance BEGGED me to make this for him last night and how could I say no?! Justin's dark chocolate peanut butter cups are one of my favorite sweet treats and they're something we always have stocked in our kitchen. I've been on quite a baking kick lately and I'm really starting to enjoy it! Each time I feel my creations come out better and better. We devoured 2 huge slices of this last night and I do not regret a thing.
INGREDIENTS:
Preheat the oven to 350° and grease your cast iron skillet or brownie pan with coconut oil. In a medium sized bowl, whisk together the flour, cacao powder and salt.
Melt together butter and chocolate chips, stirring occasionally until chocolate and butter become smooth and incorporated. I used the double-boiler method. Turn off the heat, and whisk the sugars into melted chocolate until combined. Now you can remove the bowl from heat and being to add the eggs one at a time, stirring between each.
Add vanilla extract to mixture and mix again. Add flour mixture into the chocolate mixture and fold in the dry ingredients until all is incorporated. If you have extra chocolate chips you can now add them to your brownie batter.
Add batter into skillet and then top with peanut butter cups, lightly pressing them into the batter. Bake for 20-25 minutes depending on how fudgy or dense you like your brownies.
Once brownies are baked and cooled slice and enjoy!

- 1/2 cup Madhava Sweet coconut sugar

- 8 dark chocolate Justin's PB cups ..7 for decorating the top of the brownie, eat the 8th one while you wait for the brownie to bake ;)
