I absolutely LOVE this new Ancient Harvest green lentil. Legit in love. I've always grown up eating pasta a few times a week for dinner but now that I'm 22 and only 4'11 having a short frame means carbs multiple nights a week is NOT what I need. plus my body could NEVER handle all that gluten now. So for a while I stayed far away from pasta, even brown rice pasta is still a bit heavy for my liking but GREEN LENTIL PASTA. I do not know what it is, my body just absolutely loves it. How many times have I said love in this paragraph? ANYWHO, without further ado I'm gonna tell you what to do so you can recreate this perfect dinner at home.
WHAT YOU'LL NEED:
- 1 box of Ancient Harvest green lentil pasta cooked accordingly
- 2 cups washed and sliced brussel sprouts
- 1/2 can drained, washed, peeled chickpeas
- 1 cup butternut squash (raw or roasted, however you prefer)
- 1/4 cup nutritonal yeast
- pink salt and pepper
- 1 lemon
- garlic powder
- 2 cloves of roasted garlic
- 1/2 cup cashew milk
- 1/4 cup diced onion
- coconut oil
begin to cook pasta according to direction on box. heat your cast iron skillet with coconut oil and add brussels to skillet and lightly season with salt, pepper and garlic powder to taste. LET THEM SIT for at least 6 minutes before tossing, you want them charred. grab your vitamix and throw in chickpeas, butternut squash, juice from 1/2 lemon, cashew milk, 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon garlic powder, roasted garlic, onion and nutritional yeast. blend on high for about 2 minutes until its thick and creamy AF. toss brussels and let cook on the other side for another 6-8 minutes. add cheese sauce to the pan you cooked your pasta in and heat over a low heat for 2 minutes. once brussels are done, combine pasta and sauce into your cast iron and add the juice of the other half of the lemon on top, sprinkle with some chili flakes. mix well and serve immediately.

I absolutely love this dish because it is so versatile. I had leftovers so the next night I added a bit of organic ground turkey to it with some roasted tomatoes and Farmhouse Culture smoked jalapeno kraut. It all paired to perfectly together and this meal can suit vegans and not vegans depending on what you add to it. I hope all you babes enjoy, xo.
