One of my favorite things to do is entertain, while it can be a bit overwhelming, the key to remaining calm, having fun and enjoying yourself is to KEEP IT SIMPLE. I promise your friends and family all know what entertaining is like and they're already so appreciative that your're the one doing it all. you don't need to get super fancy when entertaining, what I like most about going over somebody else's house is being comfortable. first things first, be sure you have a few pleasingly scented candles lit because candles always set the mood, get a good spoitfy playlist going for some background music, have your favorite bottle of wine ready - and don't be shy asking your friends to bring one of their favorite bottles as well. it's a great conversation starter and your guest will enjoy sharing something that they love as well. now on to the most important thing, FOOD! they key to making sure everyone is full and satisfied is having options. I always love getting a big loaf of sourdough or a fresh pita and having 2 flavors of hummus. carrots and broccoli are also my favorite veggies to serve for dipping as well. I love getting a big bag of pre-cut kale for my salad, I simply massage it in olive oil and lemon juice then add a touch of pink salt and nutritional yeast and sprinkle a bit of hemp seeds on top. if you want to get fancy you can totally add some craisins and walnuts on top as well. next is for your meat lovers, serving meat to all your guests can get pricey so sometimes you have to get creative. I love to make these turkey bacon wrapped cauliflower bites, their simple and quick to make and come on who doesn't love bacon?! you can totally opt for regular organic bacon as well.
WHAT YOU NEED:
slice the cauliflower florets into bite size pieces and then in half down the middle so they are able to lay flat. add cauliflower into a large mixing bowl. melt 2 tablespoons of ghee and 2 tablespoons of honey. pour ghee and honey mixture over cauliflower, then season with smoked paprika, onion powder + pink salt and mix well. then cut the turkey bacon slices in half so you have 16 slices. wrap each floret with 1 half slice of turkey bacon and secure with a tooth pick. bake in a 400 degree oven for 20-25 minutes until bacon edges are crispy! serve with a side of spicy brown or dijon mustard. trust me, your guests will devour.
