winner winner chicken dinner - this dish really was a winner. my finace was working a bit later then usual so I took that free time I had after work to swiftly tidy up our home, cozy up with our pups, set the table (something we hardly ever do), light a few candles + get to cookin'. he lives for any type of zoodle, just last week I learned he LOVES beet noodles (stunned, I was.) so I made a pad thai inspired sauce for our zoodles + seared organic chicken thighs, because he lives for the crispy skin.. I mean who doesn't? I could not wait for him to walk in after a long day of work to spoil him with this meal.
INGREDIENTS:
for the sauce -
RECIPE:
in a small bowl whisk all liquid ingredients for sauce then add chili, onion, ginger and garlic and let sit for 20 minutes stirring occasionally. get a cast iron skillet very hot and grease with oil of choice. sear chicken thigh for 7 minutes, flip chicken and repeat then bake in the oven at 350 degrees skin side down for another 10-12 minutes. let sit and rest before serving. chop and then steam about 1 cup of broccoli for 5 minutes. in the same cast iron skillet add sliced mushrooms and saute for 3 minuets, next add zoodles and the sauce you prepared and give a good mix. add in steamed broccoli and some chopped kale give another good mix so everything is well coated. remove from heat and serve aside chicken. I topped ours off with some more chili flakes and a drop of tamari but it's definitely not needed.

- 3 tablespoons tamari (coconut aminos or soy sauce will work as well)
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 2 tablespoons chili flakes
- 1/3 cup minced white onion
- 1 tablespoon minced ginger
- 3 cloves minced garlic
