who doesn't love homemade pancakes on a sunday morning?! I know I do, I also know it's great to not feeling extremely full + lazy after indulging. SO GUESS WHAT, now you can eat all the pancakes you want without the guilt afterwards. these toasted coconut pancakes will have you in breakfast/brunch/bFastinbed heaven.
TO MAKE BATTER:
(combine all ingredients in a blender)
1 cup gf rolled oats
2 tablespoons cinnamon
2 tablespoons chia seeds
1/2 cup organic unsweetened shredded coconut
3 tablespoons sweetener of choice (I used Woodstock organic cane sugar)
1 teaspoon simply organic vanilla extract
1 cup cashew milk
1 cup water
Serves: 2
Yield: 6 medium size pancakes
after blending all the ingredients for about 2 minutes (until the perfect batter consistency is reached) lightly heat (medium flame) + grease a frying pan with coconut oil or vegan butter (I used earth balance soy free vegan butter) pour just enough of your batter into the frying pan to make the perfect sized pancake + sprinkle some shredded coconut on top. wait for the little bubbles to appear + that's when you know it's time to flip em! (about 2 minutes on each side) top them off with organic maple syrup, more coconut + organic fruit.
