so I was craving a savory pasta sauce that kinda went with the fall vibe. thinking thinking thinking... I have SO MANY cans of organic pumpkin puree why not just try out a pumpkin sauce? and this beauty was created. it is the most simple sauce I've ever made from scratch and it's raw, vegan, and gluten free! all you need is a high powered blender and you're golden! kinda like this sauce. haha.. I know, not funny, sorry.
INGREDIENTS:
1 cup organic pumpkin puree
1 cup cashew milk
1/4 cup raw soaked cashews
1 tablespoon maple syrup
1 1/2 tsp pink salt
1 tsp turmeric
1 tbsp Simply Organic garlic herb spice blend
1 tsp cinnamon
1 tsp cloves
1 tsp nutmeg
*all the spices I use are Simply Organic brand.
MAKE IT:
boil any pasta of choice, I chose brown rice penne. but you could also make zucchini noodles and make this recipe completely raw! while pasta is cooking combine all ingredients into your blender except the maple syrup and blend for about 2 minutes until everything looks completely combined. now add your sweetener and blend for another 30-45 seconds. and your done! pour sauce all over pasta and let sit for 1 minute to thicken. you can top with crushed almonds or pumpkin seeds or sautee some kale to mix in. I made dinner kind of late so I just ate it plain because I was HANGRY and just needed to keep it simple and it was DELICIOUS.
