If your anything like me you were freaking out about what topping you were going to put on your pumpkin pie this Thanksgiving. Whipped cream from the can & "cool whip" just was not going to be an option this year. After doing some thinking I decided to try to make my very own homemade vegan coconut milk whipped cream (using only 3 ingredients) this was one of the easiest things to make, pleasantly surprised I was. All you will need:
1 can full fat coconut milk (BPA free)
4 tablespoons organic maple syrup
1 tablespoon vanilla extract
1 teaspoon organic powdered sugar (optional)
Place the can in the refrigerator over night to chill. When your ready to make your whipped cream place a mixing bowl in the refrigerator for 5 minutes to chill (this is optional but will help keep ingredients firmly together) flip the can upside down so all the liquid will be at the top of the can. Pour this liquid out (you can save this for smoothies for another day) you will be left with thick creamy coconut milk at the bottom. Get out an electric mixer or blender and whip until thick and creamy (start on lowest speed then gradually increase it for about 2 1/2 minutes). Now you can add your sweeteners. Whip for another minute until all combined. Chill in the refrigerator until ready to use. Enjoy!
