OH MY GOODNESS GUYS -this butternut squash pasta sauce is UNREAL. and the easiest thing to make ever. I got a tad fancy and added some grilled salmon, broccoli and spinach in with my gluten free penne but this would be completely perfect and delicious straight over any pasta of choice on its own.
another plus - its dairy free, gluten free and refined sugar free. so it's totally healthy and acceptable to eat it multiple times a week for lunch and dinner. it takes about 3 minutes in a blender so don't worry about not having a lot of time.. cooking the pasta is the time consuming part ;)
RECIPE:
1 cup diced organic butternut squash (I used frozen but any will work)
1/2 cup water or nut milk (I used water)
1/2-1 cup organic raw walnuts (depending on how creamy you want it, I used 1/2 cup)
3 TBSP nutritional yeast
1 TBSP pink salt
1 TBSP onion powder
blend on high for 1-2 minutes until sauce is creamy. pour over hot pasta, mix well and let sit to thicken for about 1 minute.
optional but for added flavor you can include 1 clove of garlic or some lemon juice.
The sauce will stay good stored in a mason jar for 3 days.
