INGREDIENTS:
in a large frying pan sautee chopped onions and garlic over medium heat in melted coconut oil. once onions and garlic are fragrant add sliced mushrooms and cook until soft and wilted down. add kimchi and cook until it starts to look dry (about 5 minutes) next add veggies and let cook for about two more minutes. now it's time to add the quinoa. slowly add in quinoa and give it a good stir until all ingredients are well combined and it is time to season it up! lower heat and add in kimchi juice, tamari, onion powder and coconut sugar give it a good mix and let flavors cook through for another five miutes. garnish with green onion and you are ready to eat. healthy chinese takeout in under 3o minutes!
