for all you green tea matcha lovers out there, this recipe is for you! and for the rest of you that are not aware what matcha powder is, here's a little summary: matcha powder is a superfood that comes from young leaves that are picked from the Camellia sinensis plants and it is stone ground into a powder form. this is the most powerful and beneficial way to receive all the healing benefits that matcha has to offer. some people enjoy it as a warm or hot latte (my personal preference), as an ice cream flavor, or in baked goods and desserts this is my first time experimenting with matcha in a dessert form and I am beyond pleased with the result.

- 1 cup dark chocolate vegan chocolate chips
- 1 1/2 cups coconut oil
- 1/2 cup coconut butter (softened)
- 1/2 cup oat flour
- 1-2 tablespoons organic matcha powder (to taste)
- 1/4 cup organic powdered sugar
- line a muffin tin with cupcake liners
- in a double-boiler add chocolate chips and 1 cup of coconut oil, slowly stir every other minute until oil and chocolate has completely melted - remove from heat.
- while the chocolate is melting in a medium sized bowl combine matcha powder, powdered sugar, oat flour, softened coconut butter and 1/2 cup slightly melted coconut oil. filling will become slightly sticky and able to form into balls.
- add 1 tablespoon of melted chocolate into the bottom of cupcake liners and set in freezer for about 2 minutes until it is hard.
- using 1 tablespoon of matcha filing roll into balls place on top of frozen chocolate layer and slightly press down to flatten.
- cover filling with 1-1 1/2 tablespoons of melted chocolate.
- freeze for one hour then enjoy!
