WELL, it's still super windy and chilly although spring is right around the corner. Which I really don't mind because I LOVE making soup and sipping on hot bone broth. yesterday morning on my way to the gym my teeth were legit chattering. UGH. so UNmotivating, but always inspiring! my chattering teeth inspired me to want to make a big pot of homemade soup for dinner to warm my chilly bones. I did not plan this out whatsoever and kinda just threw whatever I had that I thought would pair well together into a pot and this was the result and it was SO DELICIOUS if I do say so myself ;)
INGREDIENTS:
In a large pot over low-medium heat add avocado oil and minced garlic, saute until garlic is fragrant (about 3 minutes). Next add in sweet potatoes, onion powder, smoked paprika, turmeric + garlic and herb spice blend. Stir frequently for about 2 minutes. Next add in bone broth, water, tamari and bring to a boil. Once broth is boiling add in brown rice, mushrooms, broccoli and sliced chicken sausage. Reduce to a simmer and cover for about 45 minutes, stirring every 15 minutes. After 45 minutes now add in the kale, spinach, sauerkraut and brine, lemon juice, white pepper and nutritional yeast. Bring back to a low boil for 3 minutes. Give it a taste test and add as much pink salt that you feel you need. I think I added about 2 tablespoons.. and that's it! Super simple and nutritious probiotic soup to warm you up and fill your belly!

- 2 TBSP Chosen Foods avocado oil

- 1 TBSP organic/gluten free tamari
- 1 TBSP lemon juice (optional but brightens flavors)
